Recipe Summary Roasted Garlic Cauliflower Mash
This recipe is low-calorie and low in carbohydrates to meet the needs of my Ideal Protein® diet plan. I use this as a substitute for potatoes.
Ingredients | I Need A Healthy Meal Plan6 cloves garlic, crushed3 tablespoons olive oil1 large head cauliflower, coarsely chopped1 teaspoon kosher salt1 teaspoon dried parsley¼ teaspoon ground black pepperDirectionsPreheat oven to 350 degrees F (175 degrees C).Place garlic in a casserole dish and drizzle with olive oil.Roast garlic in the preheated oven until tender and fragrant, about 15 minutes.Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.Mash cauliflower and roasted garlic with olive oil together in a bowl. Stir salt, parsley, and pepper into mashed cauliflower until completely incorporated.
